    Ingredients

    To make this exquisite vanilla and almond ice cream, you will need the following ingredients:

    2 cups of almond milk

    1 cup coconut cream

    1/2 cup coconut sugar or natural sweetener to taste

    1 tablespoon of pure vanilla extract (here is my favorite below)

    1/4 cup chopped almonds (optional)

    1 pinch of salt

    Instructions

    Follow these steps to get perfectly creamy vanilla and almond ice cream:

    In a large bowl, mix the almond milk, coconut cream, coconut sugar and pinch of salt. Stir well until the sugar is completely dissolved.

    Add the vanilla extract and mix again. If you decide to include chopped almonds, this is the time to add them.

    Pour the mixture into an ice cream maker and follow the manufacturer’s instructions. If you don’t have a machine, pour the mixture into a freezer-safe container and place it in the freezer for an hour.

    After an hour, remove the container and beat the mixture with a whisk or fork to break up the ice crystals. Repeat this process every 30 minutes for about 2-3 hours, or until the mixture reaches the desired consistency. If you don’t want to have to beat the mixture every few minutes, I recommend that you get an ice cream machine or refrigerator like this one that I recommend here:

Pour the mixture into a freezer-safe container and place it in the freezer.     We start by macerating the raspberries. In a bowl, mix 200 grams of fresh raspberries with two tablespoons of sugar and let it rest for 30 minutes. This process will allow the raspberries to release their natural juices, intensifying their flavor in the ice cream.

    While the raspberries macerate, we prepare the mint infusion. Heat 500 ml of oat milk over low heat until it starts to boil. Remove from the heat and add a generous handful of fresh mint leaves, letting it rest for 15 minutes so that the milk absorbs the mint flavor. Afterwards, we strain the milk to eliminate the mint leaves, obtaining an aromatic infusion.

    In a blender, we combine the mint infusion with the macerated raspberries and add 100 grams of sugar. We beat until we obtain a homogeneous mixture. If a finer texture is desired, the mixture can be strained to remove the raspberry seeds.

    Pour the mixture into an ice cream maker and follow the manufacturer’s instructions. If we do not have a machine, we can place the mixture in a freezer-safe container, stirring every 30 minutes for 4 hours to prevent the formation of ice crystals and ensure a smooth texture.
