    Preparation

    1. In a saucepan, heat the milk and cream over medium heat until it begins to boil. Remove from heat and reserve.
    2. In a separate bowl, beat the egg yolks with the sugar until foamy and light in color.
    3. Pour the milk and cream mixture over the beaten yolks, stirring constantly to integrate all the ingredients.
    4. Wash the pot and pour the mixture back into it. Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon.
    5. Remove the pot from the heat and add the vanilla extract. Mix well and divide the mixture into two equal parts in separate containers.
    6. Melt the dark chocolate in a double boiler or in the microwave, taking care not to burn it. Add the butter to the melted chocolate and mix until smooth and shiny.
    7. Add the melted chocolate to one part of the ice cream mixture, mixing vigorously so that it is completely integrated.
    8. Let both mixtures cool in the refrigerator for at least 4 hours, or preferably overnight, so that they become consistent.
    9. Once the mixtures are very cold, remove the chocolate mixture from the refrigerator and pour it into the container of the ice cream maker. Follow your machine’s instructions to obtain the desired consistency. Here I recommend this ice cream machine or refrigerator that is absolutely great:

    2. Repeat the process with the vanilla mixture, making sure the gold flakes are mixed evenly into the ice cream.

    Ice cream preparation

    While the ice cream is cooling, prepare the chocolate. Chop the dark chocolate into small pieces and place in a heatproof bowl. Add the butter and melt everything in a double boiler, stirring constantly until smooth and shiny.

    Remove from the heat and let the chocolate cool slightly, but make sure it is still liquid enough to work with.

    Ice cream assembly

    Once the ice cream is very cold, remove it from the refrigerator and transfer it to an ice cream maker. Process according to manufacturer’s instructions until ice cream has a smooth, creamy texture.

    Transfer the ice cream to an airtight container and freeze for at least 2 more hours, or until completely firm.
